... This pan is outstanding... Very heavy... Will last many lifetimes... Better than cast iron because steel is not brittle and will not crack... Very thick... Holds and transfers heat very well... All you need to do is season it properly and it is good to go... Crazy how people try all these "non-stick" pans that are coated with chemicals that may or may not have adverse effects on our health... Cooking on good old fashioned steel is the way to go... Stainless steel will NOT develop a carbon layer like steel does... This pan will turn dark blue then black over time... A teaspoon or two of olive oil spread around in it before you cook and nothing will stick to it or permanently damage it... If you do scrub the carbon layer off with a scouring pad it is easy to re-season... I do wish it were American made but, sad to say it seems we don't make things like this in America anymore... Sad.

oxidation.
