Victorinox ceramic blades are manufactured from high-purity zirconium oxide powder, compressed at very high pressures and sintered in furnaces at temperatures over 2700° F. The result is an extremely hard blade that is comparable to the hardness of a diamond. Each knife is then equipped with our Classic Victorinox Fibrox handle with signature textured grip, helping reduce the chance of slippage. Extremely sharp, lightweight blade

This is my first ceramic blade. I was skeptical at first on this replacing my Henckel knife but so far it's done just that. It's the most used knife in my set. On first glance the ceramic material looks very flimsy, like one of those plastic knives. But the blade is surprisingly sharp and sturdy. In fact it's sharper than my regular knife. It cuts through vegies, fruits, and meat quite easily, without much force. Although this particular shape is not ideal for detail work, the lightness and thinness of the blade give you a lot of control for fine cuts. I'm very satisfied so far.

This knife has more of a chopping cut than a sliding cut and I find it cuts through vegetables much faster than a stainless steel knife. It's lighter and more comfortable to use as well and being ceramic is chemically inert so fruits don't turn brown after cut and exposed to air.
